My Favorite Instant Pot Trick

Today I’m so excited to share my favorite trick for using your Instant Pot.

I’ve had too much time stuck at home lately with sick kiddos. And by sick, I mean kids are COMPLETELY faking it. Today my daughter complained of a tummy ache so I tucked her back into bed with a bowl, and in about 20 minutes she was up dancing around and asking to watch a movie. Nope. Not sick. I got duped. I guess each kid has to try to get out of school at least once, right?

The good thing about being stuck at home is that I’ve had extra time in the kitchen to do some meal prep and stock the freezer. My favorite tool in the kitchen these days is, without a doubt, my Instant Pot electric pressure cooker. {read more}

How to Add Hygge in Your Life

My interest in hygge started last year when I was in the checkout line at Marshalls. I had one of those thick, faux fur throws in my basket and the woman behind me commented that I would love it, that she had the same one at home. I smiled in agreement and as we chatted, she asked me if I knew about the Danish practice of hygge (pronounced: HOO-gah).

What is Hygge?

I don’t remember exactly how she defined it to me at the time, but she had a serene glow as she explained. She told me about her daily ritual of putting everything down and sitting with her husband under cozy blankets with a hot cup of tea. Just to sit, just to connect, with the flicker of candlelight and a mindset of rest and rejuvenation. Sometimes they would read, sometimes they would rest, sometimes they would just sit and savor a sweet treat. She described the setting, but what I took away more was the intention, and the purposeful connection. Time set aside each day for self-care, for community, and for rest. She told me to look it up, because there was so much more to it than she could explain. Her words stuck with me, and I started to do some research. {read more}

What the heck is Matcha?

If you’re not familiar with matcha, it’s a very concentrated green tea powder. This means you get all the benefits of green tea (antioxidants, metabolism booster, detoxification – just to name a few) by just using a small amount. I personally love the flavor, it’s very earthy. I find that it gives me a nice energy burst, but in a more gradual, sustained way than coffee. These little cereal breakfast bars are my new go-to on busy mornings. With a few tweaks from the traditional cereal bars you’ve probably seen before, they pack more protein and fiber but still taste great.

Furthermore, these can easily accommodate gluten and/or nut allergies. Simply ensure that you use a gluten-free cereal (Cheerios are now gluten-free) and an alternative nut butter, like almond butter or sun butter.

I hate the word diet and just don’t believe in dieting. Could be why I have a few extra lbs to lose, but I believe we’ve gotten a little too obsessed about what we should or shouldn’t eat, and that we spend too much time thinking about it. You know, the gluten-free, dairy free, sugar is like cocaine, that’s a wheat belly you’ve got there…message we hear everywhere. It gets confusing to know what to eat anymore.
