My Favorite Instant Pot Trick

Today I’m so excited to share my favorite trick for using your Instant Pot.

I’ve had too much time stuck at home lately with sick kiddos. And by sick, I mean kids are COMPLETELY faking it. Today my daughter complained of a tummy ache so I tucked her back into bed with a bowl, and in about 20 minutes she was up dancing around and asking to watch a movie. Nope. Not sick. I got duped. I guess each kid has to try to get out of school at least once, right?

The good thing about being stuck at home is that I’ve had extra time in the kitchen to do some meal prep and stock the freezer. My favorite tool in the kitchen these days is, without a doubt, my Instant Pot electric pressure cooker. {read more}

How to Make an Iced Matcha Latte

Hello friends! Today I’m sharing my favorite caffeinated treat for summer, an Iced Matcha Latte.

What the heck is Matcha?

If you’re not familiar with matcha, it’s a very concentrated green tea powder. This means you get all the benefits of green tea (antioxidants, metabolism booster, detoxification – just to name a few) by just using a small amount. I personally love the flavor, it’s very earthy. I find that it gives me a nice energy burst, but in a more gradual, sustained way than coffee. You can find the matcha powder at most grocery stores, or online (I use this one). {read more}

Friday Favorites

sex and the city samantha jones quote friday favorites

This is my current response to the political mess that is happening in our country. Let’s just throw a party instead of spending another three hours watching a group of grown ups acting like morons debate. It reminds me too much of being in the car with my kids.

Smoothie with a Kick
My new favorite smoothie with a shot of coffee. Blend up 1 cup almond milk (or other milk, I like unsweetened vanilla almond milk), one shot of coffee, one scoop vanilla protein powder (I love this one)  and a few ice cubes. It’s so delicious and a different way to enjoy your morning cup of coffee with some protein. {read more}

Recipe: Waffle Iron Sweet Potato Hash Browns

sweet potato hash browns waffle iron pale recipe

I keep hearing about all the cool ways you can use your waffle iron for foods other than waffles. Who knew?

My waffle iron is extra special to me, because my grandma gave it to us as a wedding gift. She was not getting around much at that point, but made the effort to go to the store and look up our registry and pick it out. I think of her every time I use it.

Today I’m going to show you an easy peasy way to make sweet potato hash browns in the waffle iron. I love this idea because it’s just so simple, and you get a wonderfully flavorful side dish that is great for breakfast, or really any meal. {read more}

Cookie butter. Have you tried it? It’s amazing.

If you haven’t tried cookie butter, or speculoos, you will find it in the nut butter aisle at Trader Joe’s. It has the consistency of peanut butter but tastes like a cookie. I know.
I know.

So, I came up with my homemade cookie butter recipe, I hope you like it!

Serve with fruit (apples or banana slices are good), or spread on bread or crackers. Also makes a great topping for waffles or, well, anything. 🙂

If you try the recipe, let me know how you like it! {read more}
